Lunch is always a hard meal.... for me, sometimes I eat it, sometimes I totally skip it. But the good thing about eating healthy and being in tune with your body, is that either decision is the right one! You don't necessarily need to eat lunch everyday - if you're filling your body with wholesome, nutritious food throughout the day, then you are able to last longer without having to eat every few hours.
On the days that I do eat lunch though, I am always looking for something simple and light! I like having prepped grilled chicken or salmon in the fridge, or even extra tuna cans in the pantry so that I can make an easy lunch, even on the days that I am go-go-go! Nourishing the body and the mind is even more important when you have a hectic week.
These are super simple to make and can be exchanged with many different ingredients!

Serving Size: 2 lettuce wraps
Ingredients:
Wild-caught, water-based. fresh Wild Planet Albacore or Skipjack tuna
1 head of lettuce or cabbage
Chopped bell pepper (green, orange or red)
Chopped onion
Chopped cucumber
1/2 avocado
salt + pepper
Directions:
Drain the water from the tuna and place into a bowl. Mix together with the mayonnaise and the salt + pepper.
Chop up the onions, tomatoes and avocado.
Place all ingredients into the lettuce or cabbage leaf, and top with more spices or more avocado!
