quinoa + chicken sausage hash



When people ask me about things that I eat, or to share recipes, I usually just tell them that I throw everything on a plate, and eat it. And it's true! I'm by no means your recipe guru, but rather follow the fab four rule: protein, healthy fats, fiber, and greens. If those four categories are on my plate, then I am good to go!


This plate is inspired by that same mentality - quick, easy and full of all the nourishment you need! It's great for a work-from-home lunch or delicious dinner!


Prep Time: 15 minutes


INGREDIENTS

  • 1-2 servings organic chicken sausage

  • 1 cup quinoa

  • chopped mushrooms

  • chopped asparagus

  • chopped tomatoes

  • avocado

  • side of fresh berries (optional)

  • salt + pepper

  • extra-virgin olive oil


DIRECTIONS

  • For the quinoa, take 1 cup of quinoa and 1.5 cups of water and simmer in a small pot on medium heat. Stir occasionally, until water has been absorbed. When fully cooked through (water will be gone and quinoa will be soft), turn heat off.

  • For the chicken sausage, simply slice up and cook in a skillet on a medium heat. Turn over each side every minute or so, until cooked to desire consistency. Add in the mushrooms and asparagus and continue to stir until flavors mix.

  • On a plate, cut up your fresh fruit, avocado and tomatoes and then add your quinoa, chicken sausage and veggies and enjoy!

  • Top with salt and pepper or other added spices!
