peanut butter cookie dough bites

With all the extra time that we have on our hands during this #coronavirus, we now have so much time to devote to other things and to slow down a bit!


I don't know about you, but I love baking and getting creative in the kitchen! And what better thing to make than some cookie dough bites?! Out.of.this.world. The best news? These are no bake and only take about 15 minutes to make! Plus, they are #glutenfree and #dairyfree!

Prep time: 10 minutes

Servings: 12-16 bites



INGREDIENTS:

  • 2/3 cup creamy (or crunchy) peanut butter

  • 1/2 cup vanilla protein powder (I used Truvani)

  • 1/4 cup raw honey

  • 1/3 cup, unsweetened shredded coconut

  • 1/3 cup dark or dairy-free chocolate chips

  • *1 tbsp hemp seeds (optional)

  • *1 tbsp collagen (optional)

  • *1 tbsp ground flax seeds (optional)



DIRECTIONS:

  • In a large bowl, mix together the peanut butter + the honey. Stir in the protein powder and coconut flakes until well combined. Add in the chocolate chips and other additional ingredients and again, stir until evenly distributed.

  • Roll dough into 1-2 inch bites, and place on a wax paper lined sheet or large plate.

  • Refrigerate for 20-30 minutes. Enjoy!!!
