open-faced tuna + avocado sandwich



I used to grow up eating tuna sandwiches -- my mom would have one made for me when I got home from school, or just on the weekend when I was home for lunch. I didn't really realize how much I loved them until I grew up and didn't have mom to make them for me anymore!


Tuna is a GREAT option for protein throughout the day, and can be enjoyed so many ways! It can be eaten by itself, or even paired with avocado or egg for a unique taste! Try this next time you need a filling yet simple lunch:


Prep Time: 5 minutes


INGREDIENTS

  • 1-2 pieces of sprouted or gluten-free bread

  • 1 can of water-based tuna - I love Safe Catch or Wild Planet

  • 1tbsp avocado-oil based mayonnaise - I love Primal Kitchen

  • 1/2 avocado

  • salt + pepper

  • extra-virgin olive oil (optional)

  • dill + other spices (optional)

  • spinach (optional)


DIRECTIONS

  • In a small bowl, mix the tuna and mayonnaise together, until evenly distributed.

  • Add in desired spices (salt, pepper, dill), etc. Continue to stir.

  • Toast the bread slice(s) until desired texture.

  • Lay spinach down on top of the toast, then cover with avocado and tuna on top. Add more spices or extra virgin olive oil on top if desired! Enjoy!
