grass-fed beef & tomato pasta


So there was this meal growing up that my mom would ALWAYS make that my brothers and I would literally scarf down at the dinner table. I think family dinner lasted 5 minutes whenever she made this meal because we ate it so fast. It was so simple -- very similar to spaghetti, but ground beef was on top with a little pasta sauce and the noodles were the rigatoni version, not the thin spaghetti pasta. I actually hate those...they're so dang hard to eat, especially gracefully.

SO, I told her that I need to re-make this recipe, because I still love it so much, but definitely wanted to do so without the conventional meat products and sugar-loaded pasta sauces. A healthier version.....who would have thought!? The recipe remains very similar, but I've exchanged the pasta for a lentil-based version to accommodate my gluten-free needs, I use fresh tomatoes as the sauce, and only cook grass-fed, organic meat to ensure I don't put myself at risk by eating conventional meat with all of the added preservatives and hormones! Now, I'm here to share the recipe with you. I promise you that it's a very yummy, delicious and filling meal and great to make for a large group or family gathering!

Prep Time: 20 minutes

Cook Time: 20 minutes

Total Time: 40 minutes

Serving Size: 3-4 portions (great for leftovers too)

Ingredients:

  • 1 lb grass-fed. organic ground beef

  • extra virgin olive oil or coconut oil

  • fresh, organic, chopped cherry tomatoes

  • 1 cup chopped onion

  • 1 cup chopped garlic

  • 1 cup chopped spinach

  • salt + pepper

  • turmeric

  • cayenne

  • 2 sliced avocado

  • organic pasta sauce (optional - pay attention to the sugar content!)

Directions:

  • In a large skillet, on a medium heat, begin to cook the grass-fed beef with the extra virgin olive or coconut oil and add the various spices on top (if desired).

  • When halfway cooked, throw in the chopped onion, garlic, spinach and chopped cherry tomatoes and continue to stir around until evenly cooked throughout. Cover the skillet to allow the flavors to work together more.

  • When fully cooked, serve it out to your guests, and top off with some chopped avocado, or organic pasta sauce to add a little bit more flavor!

  • Enjoy!

**We had some other grilled vegetables on the side, as well as a fruit salad with some chopped strawberries, blueberries and pomegranate seeds!
