Whenever I would stop at a gas station growing up, I would always want the cookie & ice cream sandwich combo. Always. SO AMAZING. That was when I realized I needed to figure out a way to make a healthier version, so I could still enjoy them but not feel as guilty. But honestly my #1 reason was just so I could have them without harming my body in the process!
Check these out for a LIFE- CHANGING post-dinner sweet treat :)
INGREDIENTS:
1 box of Simple Mills Almond Flour Cookie Mix
3 tbsp almond or coconut milk
3 tbsp oil (coconut oil is what I used!)
1 tsp vanilla extract
1 serving collagen (optional)
1 tbsp chia seeds (optional)
dash of cinnamon (optional)
1 container of NadaMoo dairy-free ice cream
DIRECTIONS:
Simply bake the cookies according to the directions on the box! I added the collagen, chia seeds and cinnamon in addition to the vanilla extract, coconut oil and almond milk for added protein and fiber. Mix all ingredients together, bake in the oven for 12-15 minutes until golden brown and let cool for 2-3 minutes.
Take two cookies, and place a spoonful of ice cream in the middle, then press down to create a sandwich! They are best enjoyed when warm!
