Remember, cooking healthy meals doesn’t have to be complicated! I have loved making dinners on the sheet pan lately - not only because they are super easy to make, but also because they are super easy to clean up. HOLLA when you don’t have a ton of dishes to do and can sit on your couch or crack open a good book instead.
Here is how to prepare:
Prep Time: 10 minutes
Cook Time: 15-20 minutes
INGREDIENTS:
2 wild-caught salmon fillets (I got mine at Publix, but Trader Joes, Sprouts or Whole Foods are also great options!)
extra-virgin olive oil
Primal Kitchen Foods avocado-oil based mayonnaise
fresh lemon wedges
fresh dill
Simply Organic Foods adobo seasoning
1-2 sweet potatoes
1-2 servings brussels sprouts
salt + pepper
DIRECTIONS:
Prep your sheet pan by covering it in tin foil.
Preheat oven to 420 degrees.
Place salmon on top, and season it with mayonnaise, dill, lemon juice and extra-virgin olive oil.
Slice up the sweet potato (either as fries or circular rounds) as well as the brussels sprouts and place them around the salmon. Season with adobo seasoning (optional).
Place sheet pan in oven and bake for 15-20 minutes at 420 degrees, broil for 2-3 for extra crispiness.
Portion out and enjoy!
