tuna walnut salad


Who doesn't love a big ol' fresh salad?! They are easily one of my favorite meals to make during the day, especially for lunch, to give me a nice brain boost in between client calls and other projects!

One of my favorites to make is a tuna salad -- my mom used to make them as a staple for me growing up for lunch whenever I was at home, and they have continued to be a part of my life! They are just an easy way to get some real food & nourishing protein in your diet without all of the hassle of having to come up with a detailed recipe!

Here is one of my favorites:

Prep Time: 10 minutes

Serving Size: 1-2 salads (depending on size)

INGREDIENTS

  • 1 can of wild-caught tuna (I love Wild Planet or Safe Catch)

  • chopped cucumber

  • walnuts

  • chopped onion

  • chopped bell pepper

  • fresh tomato

  • spinach

  • extra-virgin olive oil

  • avocado-oil based mayonnaise

DIRECTIONS

  • Pour tuna into a bowl and mix with some avocado-oil based mayonnaise (Primal Kitchen is my favorite) along with some salt + pepper.

  • Place spinach as the base of the bowl/plate.

  • Top with tuna, chopped cucumber, chopped bell pepper, chopped onion, walnuts and tomato.

  • Sprinkle hemp seeds on top for added omegas (optional) and/or extra-virgin olive oil for added healthy fat!

  • Enjoy!
