gluten-free pita/naan bread

When I went gluten-free a few years ago, the first thing that everyone always responded with was "How can you survive!? That means you can't eat bread!" Now this is only slightly true. While I do stay away from most gluten-filled bread products, that does not mean that I don't eat carbs or don't eat any "bread" at all. It's just a matter of finding a healthier way to make it that works for you and your lifestyle. Trust me, I love bread and still eat it!

Introducing.... gluten-free pita or "naan" bread, as some like to call it. These little guys are great for a sandwich, a dinner appetizer or even an afternoon snack dipped in hummus or guacamole. A friend of mine specifically asked that I try to make a recipe for them, so here you are! They only require a few ingredients and are all gluten-free and dairy-free!

Prep Time: 10 minutes

Cook Time: 20 minutes

Serving Size: 8-10 pieces

Total Time: 30 minutes

INGREDIENTS

  • 1 and 1/2 cups of cassava flour

  • 1/4 cup avocado oil or extra-virgin olive oil

  • 1 and 1/4 cup filtered water

  • 1/2 tsp sea salt

  • dash of black pepper

  • 1/4 tsp garlic powder

  • 1/2 tsp melted ghee

  • 1 serving Truvani collagen (optional)

  • 1 tbsp grounded flax seeds (optional)

DIRECTIONS

  • In a large bowl, mix all ingredients together until they form a ball of soft dough.

  • Separate the dough into small pieces (might be a little sticky, but that's okay!) and place one by one onto either a grill pan or regular cast iron/frying pan. Flatten them out as much as you can.

  • Cook on a low to medium heat until both sides are fully brown and crispy (takes about 5 minutes per side).

  • Let them sit for a few minutes to cool. Grab some hummus or guacamole and munch away!
