I won't lie.... it has been a hot minute since I have shared a recipe with you all! I most definitely want to be sharing more with you, but life is crazy and I am waiting for it to settle down in a month before I can dedicate more time to creating recipes, so hang tight! Besides starting a new job, traveling and just the holidays in general, I have a new move on top of all of that. BUT the good news is that the kitchen in my new place is *off the chain,* so I can't wait to use it for all the new recipes!
With fall in full swing, it is of course required to make a recipe with pumpkin spice! It's everywhere - smoothies, lattes, muffins, cookies.... - and it's SO good! Did know that pumpkin is full of antioxidants and is shown to improve heart health? Sounds like a win to me!
This recipe is perfect for fall and is super easy to make! And of course, pumpkin spice is a main ingredient. I hope you enjoy!

Ingredients (for the Macaroons)
2 cups unsweetened shredded coconut flakes
2 egg whites
1/4 cup coconut oil
3 tablespoons maple syrup
1 tablespoon coconut milk
1 tablespoon coconut flour
1 tablespoon ground cinnamon
1 tablespoon pumpkin spice
1 tablespoon ground nutmeg
1/2 tablespoon ground ginger
Ingredients (for the Chocolate Glaze)
1 cup Enjoy Life dairy-free chocolate chips
1/4 cup coconut butter, melted
Directions:
Preheat oven to 325 degrees.
Mix all macaroon ingredients in a bowl until evenly combined.
Scoop into balls and put onto a lightly greased cookie sheet (using a small ice cream scoop can help!)
Bake for 6-8 minutes, until golden. Keep an eye on them!
Drizzle with glaze and store in freezer for 30 minutes to harden. Enjoy!
