Breakfast is always a hard meal to whip together in the morning --- most of the time we are go-go-go that it can be challenging to allow enough time to prepare something, or even become creative with things to eat! Bacon, eggs, bagels, toast and so many other "conventional" meals come to mind, but I'm here to tell you there are other ideas beyond those that provide the same (if not more) nutritional value to get you started on the right foot. This idea in particular can be made in 5 minutes or less and is a great option when running out the door! (It could even be prepped the night before if needed).
I personally am an egg fan (scrambled, sunny-side, omelet... it doesn't matter) but I like to spice things up occasionally and have a smoothie or even a yogurt bowl! They're so easy to prepare and they can be full of SO many different superfoods, fresh fruits and healthy fats that help to keep you satisfied all morning long! Every time I have made one recently, I have always used different ingredients to spice things up - the perfect option to keep you from getting bored (plus they're so freaking pretty!)
Prep Time: 5 minutes
Cook Time: N/A
Total Time: 5 minutes
Serving Size: 1 yogurt bowl
Ingredients (portions of additional items are up to you!):
1 cup (or one small container) of plain yogurt (2 if you want more of a base)
1/2 cup of kefir (similar to yogurt but adds more probiotics & a little more liquid)
blueberries
strawberries
banana (another option! - not included)
raspberries (another option! - not included)
chia seeds (another option! - not included)
flax seeds (another option! - not included)
unsweetened coconut flakes (another option! - not included)
Directions:
In a small bowl, place the yogurt and kefir at the bottom.
Add a tablespoon or two of the raw cashew or almond butter on top of the yogurt and kefir.
Portion out the superfoods and fruits of your choice and slowly sift them on top! (it does not have to look like my picture lol)
Voila! Enjoy on-the-go or as a quick breakfast before heading out the door.
Happy Monday!! I hope you have a a great week!
xoxo,
Kell
