Happy Friday! Another salad recipe for you! I prefer salads throughout the week because they are super easy to prepare, and they can be made in SO many different ways. This benefit also allows you to come up with something different everyday to prevent yourself from getting bored!
This salad recipe is one of my favorites because it has a lot of different flavors in it! It's also packed with nutrients and a lot of foods that assist with the detoxifying process of the body and also that are full of fibers and omegas!

Prep Time: 5 minutes
Cook Time: (including chicken and beets - 35 minutes)
Serving Size: 1-2 servings
Ingredients:
1 organic, free-range chicken breast
spinach or other mixed greens
chopped beets
chopped tomatoes
chopped cucumbers
chia seeds
blueberries
chopped brussels sprouts
1/2 avocado
topped with Primal Kitchen Foods Green Goddess dressing
sea salt + pepper
Directions:
Cook the chicken in a cast iron skillet on a medium heat with some coconut or extra virgin olive oil, and then chop into small pieces
Prepare the beets (check out the blog "how to cook beets" on how to prepare!)
In a large bowl, place the spinach and all other ingredients and mix together
Top with chicken, chopped beets and dressing
