Hi friends! Finally putting up my recipe from the other night, as I know some of you were asking! It's a great meal for those of you looking to provide your body with a ton of healthy fats and veggies, and also keep you full for a long period of time. The bowl also makes the dish seem larger.... we had a lot of leftovers!
You can add or change out certain ingredients, but this is what we did:
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes
Serving Size: 2 full bowls
Ingredients:
1 head of cauliflower
1lb organic chicken breast (optional)
2 cups mushrooms
1 cup chopped green pepper
1 cup spinach
1 lemon, juiced
1 avocado
goat cheese
1 cup onion
1/2 cup chopped asparagus
1 clove fresh garlic

ginger
turmeric
Directions:
Start by prepping the chicken - cover it in various spices (we used ginger and turmeric) and then place in a skillet with some Primal Kitchen avocado oil and cook on a medium heat. When fully cooked, let it cool then slice up into small chunks.
In a separate skillet, chop up the onions, garlic, spinach, green pepper, mushrooms and asparagus and cook with some more avocado oil until flavors are evenly distributed. Add the lemon juice on top for some extra flavor.
While both skillets are prepping their food, use a food processor to create the cauliflower rice - simply take the full head of cauliflower, chop it up into smaller pieces and place those in the processor, and grind until smooth. Either place in the bottom of your bowl while cold, or heat up in a skillet for a little more warmth.
When everything is ready, place the cauliflower at the bottom of your bowl, then place veggies and chicken on top. Top off with some fresh avocado, or goat cheese for some additional flavor.
