Guys.....ice-cream. Not even a question one of the best things on this earth. I used to go to the beach every summer growing up and literally the trip would not be complete without a stop at the ice-cream shop. 'Twas basically a bowl loaded up with various chocolates and sugars, a child's dream!!! Little did I know I was actually eating a bowl of chemicals and artificial dyes.... BUT man it tasted good.
Well, now that I'm older and wiser I've tried to deviate from those terrible habits and take the things I love and find healthier ways to enjoy them! So, I now have a fresh and healthy homemade ice-cream recipe for you all so you can have your cake & eat it too. But in this case, ice-cream.
This recipe is gluten-free AND dairy-free and super easy to make! Watch the video below for an easy overview or keep reading for I have it written down step-by-step as well. I hope you like it!!
Prep Time: 10 minutes
Freeze Time: 1-2 hours
Total Time: 2 hours 10 minutes
Servings: 2-3 servings (depending on how large the servings are lol)
Ingredients:
1 can organic coconut milk
1 teaspoon vanilla extract
2-3 frozen bananas (depending on sweetness)
1 cup (or 1/2 for less sweetness) of dairy-free Enjoy Life chocolate chips
1 cup (or 1/2 for less crunchiness) of chopped walnuts
1 teaspoon chia seeds
cinnamon
Directions:
Place all ingredients into a blender - (I used a Nutribullet, but anything works!) and blend all ingredients until smooth
Pour into individual bowls, sprinkle some raw cacao nibs on top, and place in the freezer until frozen
Remove & enjoy!
