I have a love-hate relationship with these things.... I love them because they're amazing, but I hate them because they're tempting to not eat a whole batch at a time (story of my life). But I think I definitely love them more than I hate them... just incase you were wondering. Plus, that wouldn't be a very good sales pitch to try out this recipe if I hated them.
I used to always celebrate a birthday with a Carvel ice cream cake, because it was SO DANG GOOD, but realized my body would eventually hate me if I kept on with that tradition once I started to learn more about holistic nutrition. SO, I came across this recipe once, tweaked it a little bit to better reflect my tastes, and there you have it! Birthday celebrations have been completed with these suckers ever since. I personally think they taste better than regular brownies!!! Top it off with some vanilla ice cream and I am pretty sure that is what Heaven is going to be like. But you can be the judge....

Prep Time: 5 minutes
Cook Time: 20-25 minutes
Total Time: 30 minutes
Serving Size: 8 brownies
Ingredients:
1 cup almond butter (Georgia Grinders, Once Again or Trader Joes are my favorite brands!)
1/2 teaspoon vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1 pasture-raised egg (Vital Farms is my favorite!)
1/2 cup coconut palm sugar
dash of cinnamon
1 teaspoon chia seeds
1/2 cup chocolate chips (Enjoy Life is my go-to)
1/2 cup chopped walnuts (optional)
Directions:
Preheat oven to 350 degrees
Grease a small dish (8x8 or 8x6) --- (I used Primal Kitchen Foods avocado oil) or line the bottom with parchment paper
Mix all ingredients into a large bowl, except chocolate chips or walnuts, until smooth
Add in the chocolate chips and walnuts and stir until evenly distributed
Pour all batter into the dish and spread evenly
Bake about 20-25 minutes, until golden brown
Cool time = 5 minutes
Viola!!
***Add on some Three Twins, or Coconut Bliss plain vanilla ice cream for an extra treat! So yummy!!!
