Hi friends! I hope you had a great Easter weekend and were able to spend it with some great food, and some even greater company. I think one of my favorite things about Easter, or any holiday really, is the leftovers! I don't have to go grocery shopping for like a whole week...it's amazing. Whose with me???
For Easter in particular, my favorite part is having tons of leftover hard-boiled eggs! They're such an easy mid-day snack for an added energy boost, or even as a quick breakfast alternative for those hectic mornings. Not only are they full of healthy fats and protein, but they also work wonders for your eye heath as well as the strength of your bones and teeth!
I used to hate the taste of them, but now I love them and make them at the beginning of my week so I have plenty available for when I need something quick and easy to keep me moving! If you've never eaten them or prepared them before, they're super easy to do and I recommend giving them a try. There are many ways to make them, but my method never seems to fail me! Here it is:
Prep Time: 5 minutes
Cook Time: 11 minutes
Total Time: 16-20 minutes
Serving Size: 12 eggs (1 carton)
Ingredients:
1 carton of organic, pasture-raised eggs (Vital Farms is my favorite brand!)
salt
pepper
additional spices (optional)
Directions:
Bring a large pot of water to boil.
Carefully place the eggs. one at a time, into the boiling water. Make sure they are all fully immersed.
Set timer for 11 minutes and let the eggs sit.
When timer is up, carefully remove the eggs, one at a time, into a large bowl of ice-cold water to prevent them from over-cooking.
Let them cool for about 5 minutes.
They are ready to eat! Either eat immediately with various spices, or even with some guacamole on top, or simply place back into the carton and store in the refrigerator for a later use.
