banana blueberry collagen muffins


Sooo what if I told you that you could have a breakfast item that was not only gluten-free AND dairy-free but also tastes amazing!? Well, you can!

These little suckers are so good! They are full of protein, a dash of sweetness, and completely gluten-free & dairy-free! I always make a whole batch and like to have them stashed in my fridge for a grab-and-go breakfast if I am having a busy morning or week (soo...pretty much everyday). If you make them, take a picture and send it over!

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Total Servings: about 10 muffins

Ingredients:

Directions:

  • Preheat oven to 350 degrees

  • In a bowl, mash up the bananas and slowly add in all ingredients except the chopped nuts and chocolate chips

  • When an even consistency, add in the chocolate chips and the chopped nuts

  • Slowly scoop handfuls and place into the muffin pan (if not using liners, make sure to grease with coconut oil, or extra virgin olive oil)

  • Bake for about 25 minutes and remove from the oven when lightly brown

  • Enjoy!!!
