Sooo what if I told you that you could have a breakfast item that was not only gluten-free AND dairy-free but also tastes amazing!? Well, you can!
These little suckers are so good! They are full of protein, a dash of sweetness, and completely gluten-free & dairy-free! I always make a whole batch and like to have them stashed in my fridge for a grab-and-go breakfast if I am having a busy morning or week (soo...pretty much everyday). If you make them, take a picture and send it over!

Cook Time: 25 minutes
Total Time: 35 minutes
Total Servings: about 10 muffins
Ingredients:
3 eggs (preferably pasture-raised)
3 bananas, mashed
1/4 cup of coconut or almond flour
1/2 cup almond butter (preferably creamy)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 tablespoon cinnamon
1/2 teaspoon chia seeds
1/2 teaspoon flax seeds
1 teaspoon vanilla extract
1/4 cup maple syrup
1/2 cup chopped nuts
1 serving collagen
1 cup of blueberries
(optional!) 1/2 cup Enjoy Life chocolate chips or Eating Evolved Chocolate bars (cut into pieces)
Directions:
Preheat oven to 350 degrees
In a bowl, mash up the bananas and slowly add in all ingredients except the chopped nuts and chocolate chips
When an even consistency, add in the chocolate chips and the chopped nuts
Slowly scoop handfuls and place into the muffin pan (if not using liners, make sure to grease with coconut oil, or extra virgin olive oil)
Bake for about 25 minutes and remove from the oven when lightly brown
