strawberry kale salad


Happy Monday everyone! I hope you had a great weekend - #GOEAGLES. Sorry....but the family is from Philly and that's just how it has to be. And I'm sorry Pats fans.. but we just need to spice things up a bit, ya know?? Either way, it was an amazing game!

But now #backtoreality. On to another Monday, and another week of life.

Here is a yummy and easy salad recipe to get you started!

Prep Time: 10 minutes

Eating time: 2 minutes (irrelevant...but there's no cooking time so I feel like I have to put something)

Serving Size: 1 serving

Ingredients Needed:

  • Leafy greens (preferably kale, spinach or arugula)

  • Grilled chicken

  • Fresh, organic strawberries

  • Sliced nuts (best with cashews, walnuts or almonds!)

  • Carrots

  • Celery

  • Cucumber

  • Goji Berries

  • Avocado

  • Extra Virgin Olive Oil

  • Salt

  • Pepper

Directions:

  • Chop up the leafy greens and put at the base of the bowl

  • Slice up the grilled chicken, strawberries, carrots, celery, cucumber and mix into the bowl

  • Sprinkle a handful of chopped nuts and goji berries on top!

  • Top off with some avocado slices

  • Dressing: sprinkle the olive oil over the bowl and add salt & pepper to taste.

Super easy! I feel like everyone knows how to make a salad... if you don't....let's chat.
